Remove non-docs repos from MAINTAINERS
With
https://gerrit.openbmc-project.xyz/#/q/topic:maintainers+(status:open+OR+status:merged)
we moved MAINTAINERS files to their individual repos.
Copied an individual repo MAINTAINERS file and put in the correct
information for the docs repo.
