Combined witherspoon defconfig, remove sequoia/redbud

  - All of the FW changes are in to support sequoia and
    redbud in a single config
  - This commit creates the combined/default config 'witherspoon'
  - We retain a copy of witherspoon_defconfig as witherspoon-sequoia_defconfig
    to make CI happy during the transition.
