meta-amd: fix up new shellcheck warnings

New docker container is flagging some issues in this shell script:

SC2322 (style): In arithmetic contexts, ((x)) is the same as (x). Prefer only one layer of parentheses.
SC2046 (warning): Quote this to prevent word splitting.
SC2219 (style): Instead of 'let expr', prefer (( expr )).
